  • 25 pieces okra
  • 6 tbsp oil
  • ½ tsp fenugreek seeds
  • 1 tbsp green chili paste
  • 3 crushed garlic cloves
  • ½ tsp turmeric powder
  • 6 tbsp coriander powder
  • salt to taste

Instructions
 

Prepare the Okra

  • Start by cleaning the 25 pieces okra thoroughly under running water. Once clean, trim the ends and cut them into small pieces, about 1-inch long. Set aside.

Cooking

  • In a large pan, heat 6 tbsp oil over medium flame. Allow the oil to get hot but not smoking.
  • Once the oil is hot, add ½ tsp fenugreek seeds and let them sizzle for a few seconds. Next, add the chopped okra to the pan. Stir in 1 tbsp green chili paste, followed by the 3 crushed garlic cloves, ½ tsp turmeric powder, and 6 tbsp coriander powder. Mix everything well to ensure the okra is coated with the spices.
  • Cook the mixture while stirring occasionally. The okra may be a bit sticky at first, but continue cooking until it turns a darker color and is no longer sticky—this should take about 10–15 minutes. At this stage, add salt to taste and mix well.

Serve

  • Once the okra is cooked through and flavorful, remove it from heat. Serve your Bhinda nu Shaak hot with roti and a slice of lime for an extra zing!
