Suva ni bhaji is one of those humble recipes that proves simple food can still be full of flavor. This dill curry has a light, earthy taste with just enough spice to make it interesting. It is the kind of dish that feels homely, comforting, and easy to enjoy with fresh chapati.
What makes this recipe special is how quickly it comes together. You only need a few basic ingredients like dill leaves, garlic, besan, green chili paste, and a little turmeric. The besan gives the curry a lovely texture, while garlic and green chili bring in that sharp, flavorful kick.
Dill leaves have a strong, distinct aroma, so this dish is perfect if you already enjoy that taste. When cooked slowly with spices and water, the bhaji softens and blends beautifully into the curry. A little papad khar adds a nice touch to the overall flavor and gives the curry that traditional homemade feel.
This is the kind of recipe that works well for a simple lunch or dinner. You do not need too much prep, and the cooking time is short too. That makes it a great option for busy days when you still want something fresh and homemade on the table.

A squeeze of lime at the end lifts the whole dish and balances the earthy flavor of the dill. Serve it hot with chapati, and you have a comforting meal that feels light but satisfying. If you like traditional Indian vegetable dishes, this one is definitely worth making again.
