Suva Ni Bhaji Recipe | Easy Gujarati-Style Dill Curry

This Suva ni Bhaji (Dill Curry) is a quick, aromatic Gujarati dish that pairs fresh dill with roasted gram flour and garlic. Ingredients

  • 50 grams suva ni bhaji finely chopped
  • 1 clove garlic finely chopped
  • 2 tbsp oil
  • 1 tbsp besan
  • 1 tbsp green chili paste
  • 1 tbsp coriander powder
  • 1/2 tsp turmeric powder
  • salt to taste
  • a pinch papad khar
  • water as needed
  • lime for serving

Instructions

  • Finely chop 50 grams suva ni bhaji and 1 clove garlic. Keep them ready.
  • Heat the 2 tbsp oil in a pan over medium heat.
  • Add the chopped garlic and stir for a few seconds until fragrant.
  • Add the 1 tbsp besan and mix it well with the garlic and oil.
  • Add the 1 tbsp green chili paste, 1 tbsp coriander powder, 1/2 tsp turmeric powder, salt, and a pinch papad khar. Mix everything well.
  • Add the chopped suva ni bhaji and stir to combine.
  • Add water little by little to adjust the consistency.
  • Cook on low heat for 5 to 7 minutes, until the curry slightly thickens.
  • Turn off the heat, squeeze in some lime juice, and serve hot with chapati.
