Ingredients

  • 2 pomfrets cleaned
  • 4 tbsp coriander powder
  • 2 tbsp kashmiri red chili powder
  • ¾ tbsp turmeric powder
  • 1 tsp green chili paste
  • 1 tbsp garlic paste
  • salt to taste
  • 1 tbsp oil for marination
  • oil for frying
  • cup fresh coriander leaves roughly chopped
  • juwar flour sorghum flour, for coating

Instructions

Preparation

  • Take the cleaned 2 pomfrets and make three evenly spaced cuts on both sides of each fish. This helps the marinade penetrate and ensures even cooking.
  • In a large bowl, combine 4 tbsp coriander powder, 2 tbsp kashmiri red chili powder, ¾ tbsp turmeric powder, 1 tsp green chili paste, 1 tbsp garlic paste, salt to taste, and 1 tbsp oil. Add in the ⅓ cup fresh coriander leaves (roughly chopped) and mix everything well to create a thick spice paste.
  • Rub the spice mixture evenly over the pomfrets, ensuring that it gets into the cuts. Allow the fish to marinate for at least 2 hours; for best results, let it marinate overnight in the refrigerator.
  • Note: You can store marinated fish in the freezer for up to 3 months.

Cooking

  • In a pan, heat oil over medium flame for shallow frying.
  • Lightly sprinkle juwar flour on one side of each fish. Place that side down in the hot pan and cover with a lid. Let it cook for about 2-3 minutes.
  • After 2-3 minutes, open the lid and sprinkle juwar flour on the other side of the fish. Carefully flip the fish over, cover again with the lid, and cook for an additional 2-3 minutes.
  • Reduce the flame to low and cook both sides for another 3-4 minutes until fully cooked. Check if the fish is done by gently slicing it with a fork; it should flake easily.

Garnish and Serve

  • Once cooked, garnish with sliced onions and chopped coriander leaves. Serve your crispy pomfret fish fry as a delightful starter at any cocktail party or gathering!
