Servings 2 people
Total Time 10 minutes

Ingredients

  • 1 cup milk
  • 1 ¼ cups water
  • 1 tbsp black tea leaves
  • 2 tbsp sugar adjust to taste
  • ½ tsp black pepper powder
  • ½ tsp cardamom powder
  • 1 ½ inch piece ginger peeled
  • 3-4 cloves
  • 1 tbsp lemongrass leaves optional
  • 5-7 fresh mint leaves

Instructions

Prepare the Spice Paste

  • In a mortar and pestle, crush 1 ½ inch piece ginger and 3-4 cloves into a coarse paste. This will release their bold flavors into the chai.

Start Brewing the Base

  • In a medium-sized pot, add 1 ¼ cups water and heat it over medium flame. Once the water starts to warm up, add 1 tbsp black tea leaves, 2 tbsp sugar, ½ tsp black pepper powder, ½ tsp cardamom powder
  • Stir in the ginger-clove paste you prepared earlier. If you’re using 1 tbsp lemongrass leaves (optional), add them now along with the 5-7 fresh mint leaves, gently bruising them with your fingers to release their aroma.

Bring to a Boil and Add Milk

  • Let this mixture come to a boil. Once it starts bubbling, pour in the 1 cup of milk, stirring occasionally. Be ready for the chai to bubble up as it boils.
  • As the chai begins to rise to the top of the pot, lift it off the heat to let it settle down. Place it back on the stove and repeat this process one more time for a richer flavor.

Strain and Serve

  • Turn off the heat and strain the chai into your favorite cup or glass using a fine mesh strainer. Serve hot with your favorite snacks—samosas, biscuits, or pakoras pair perfectly!
