Upgrade your breakfast game with three unique takes on the classic avocado toast. Ingredients

The Base

  • 1 ripe avocado
  • 1 tbsp lemon juice
  • salt and pepper to taste
  • 2 slices sourdough bread
  • 2 tbsp olive oil divided

Variation 1: Egg

  • 1 large egg
  • 1 pinch chili flakes
  • 1 dash hot sauce Tabasco or Sriracha

Variation 2: Caprese

  • 1 clove garlic finely chopped
  • 5 cherry tomatoes halved
  • 1 tsp dried oregano
  • 3 leaves fresh basil roughly chopped
  • 1 tsp everything bagel seasoning
  • 1 tsp balsamic glaze

Variation 3: Tofu

  • 100 grams firm tofu cubed
  • 1/4 cup onion cubed
  • 1/4 cup green bell pepper cubed
  • 1/4 cup red bell pepper cubed
  • 1 pinch cayenne pepper
  • 1 tsp sesame seeds
  • 1 tsp chili-garlic oil

Instructions

Make the Mash

  • Scoop the avocado into a bowl. Add lemon juice, salt, and pepper. Use a fork to mash it until it reaches a chunky paste consistency. Set aside.

Toast the Bread

  • Heat a pan over medium heat with a drizzle of olive oil. Toast the sourdough slices until golden brown on both sides. Spread the avocado mash evenly over the toast.

For the Egg Toast

  • In the same pan, fry an egg with salt, pepper, and chili flakes. Place the finished egg on your toast and finish with a drizzle of hot sauce.

For the Caprese Toast

  • Sauté chopped garlic in olive oil until fragrant.
  • Add cherry tomatoes, oregano, and basil. Cook for about 30 seconds until the tomatoes are just lightly glaze.
  • Top your toast with the mixture, everything bagel seasoning, and a balsamic drizzle.

For the Tofu Toast

  • Brown the tofu cubes in olive oil until golden.
  • Toss in the onions and bell peppers with salt, pepper, oregano, and cayenne.
  • Sauté for one minute.
  • Pile the mixture onto the toast and finish with sesame seeds and chili-garlic oil.
