Authentic South Indian Curd Rice (Thayir Sadam) Recipe: The Ultimate Comfort Meal

Experience the ultimate South Indian comfort meal with this authentic Thayir Sadam. More than just Curd Rice, this quick recipe features soft-mashed rice folded into creamy homemade yogurt and topped with a crunchy, aromatic ghee tempering. Ingredients

  • 3 cups rice cooked (softly)
  • 3 cups curd homemade yogurt, whisked
  • 1 tbsp ghee
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2 pieces red bor chili dry
  • 1/2 tsp asafoetida hing
  • 1 tsp green chili finely chopped
  • 1 tsp ginger finely chopped
  • 1 sprig curry leaves
  • salt to taste optional

Instructions

The Rice Base

  • In a large mixing bowl, combine the cooked 3 cups rice and the homemade 3 cups curd. Use a sturdy spoon to mix them well.
  • For the best texture, ensure the rice is soft; you can even lightly mash the rice grains before adding the curd for extra creaminess.

Prepare the Tempering

  • Heat the 1 tbsp ghee in a small tempering pan over medium heat. Add the 1/2 tsp mustard seeds and let them splutter.
  • Follow with the 1/2 tsp cumin seeds, 1 tsp urad dal, and 1 tsp chana dal Sauté for a few seconds until the dals turn a light golden brown.
  • Add the dry 2 pieces red bor chili, 1/2 tsp asafoetida, 1 tsp green chili, and 1 tsp ginger. Finally, toss in the curry leaves. Let the spices sizzle for 30 seconds until the ginger is fragrant and the curry leaves are crisp.

Combine and Serve

  • Immediately pour this hot tempering over the rice and curd mixture. Stir gently to incorporate all the flavors.
  • Serve immediately at room temperature or chilled, accompanied by crispy papad and your favorite pickle.
