Authentic Punjabi Chole Masala Recipe: Dhaba-Style Chickpea Curry

Ingredients

For Pressure Cooking

  • 1 cup kabuli chana chickpeas, soaked overnight
  • 1 tsp black tea leaves
  • 5-6 black peppercorns
  • 3-4 cloves
  • 1 inch cinnamon stick
  • 2 cardamom pods
  • 1 whole kashmiri red chili
  • 1 black cardamom
  • salt to taste
  • water as needed

For the Gravy Base

  • 3 tbsp cooking oil
  • 1 bay leaf
  • 2 whole kashmiri red chilies
  • 1 tsp cumin seeds
  • 2 medium onions finely chopped
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1.5 tsp kashmiri red chili powder
  • 2 cups tomato puree
  • 1 tbsp salt adjust to taste
  • 1 tsp kasoori methi
  • 1/2 tsp garam masala
  • 1.5 tsp coriander powder
  • 1 tsp mango powder amchur
  • 1 tsp pomegranate powder anardana

For the Tempering (Tadka)

  • 1 tbsp ghee
  • 1 green chili sliced
  • 1 inch ginger cut into matchsticks
  • 2-3 garlic cloves thin strips
  • 1 tsp kashmiri red chili powder
  • 1 tsp kasoori methi

Instructions

Cook the Chickpeas

  • Tie the 1 tsp black tea leaves, 5-6 black peppercorns, 3-4 cloves, 1 inch cinnamon stick, 2 cardamom pods, 1 black cardamom, and 1 whole kashmiri red chili tightly in a small piece of muslin cloth. Place the soaked chickpeas (aka 1 cup kabuli chana), salt to taste, water, and the spice pouch into a pressure cooker. Pressure cook over medium heat for 7-8 whistles until the chickpeas are very tender. Remove the spice pouch and set aside the dark cooking liquid for the gravy.

Build the Aromatics

  • Heat 3 tbsp cooking oil in a large pan over medium heat. Add the 1 bay leaf, 2 whole kashmiri red chilies, and 1 tsp cumin seeds, letting them sizzle for a few seconds. Stir in the 2 medium onions chopped and cook until soft. Add the 1 tbsp ginger-garlic paste and sauté until the raw aroma disappears.

Simmer the Tomato Base

  • Add 1/2 tsp turmeric powder and 1.5 tsp kashmiri red chili powder, stirring briefly. Pour in the 2 cups tomato puree, mix well, cover with a lid, and cook for 4-5 minutes until the mixture thickens and releases oil around the edges.

Season and Thicken the Gravy

  • Uncover and stir in the 1 tbsp salt, 1 tsp kasoori methi, 1/2 tsp garam masala, 1.5 tsp coriander powder, 1 tsp mango powder, and 1 tsp pomegranate powder. Let the spices toast for 2 minutes. Stir in the cooked chickpeas. Lightly mash a small portion of the chickpeas with the back of your spatula to thicken the gravy. Pour in the reserved dark cooking water, cover, and simmer for 5 minutes. Turn off the heat.

Temper and Serve

  • In a tempering pan, heat 1 tbsp ghee over medium heat. Add the sliced 1 green chili, 1 inch ginger matchsticks, 2-3 garlic cloves strips, 1 tsp kashmiri red chili powder, and 1 tsp kasoori methi. Let everything sizzle for a few seconds until fragrant. Pour this hot tempering directly over the chole, stir gently, and serve hot with bhature, puri, or paratha.
