Ingredients
  

  • 2 lbs curd not hung
  • ½ cup sugar
  • 2 tbsp malai Milk Fat
  • ¼ cup almonds plus extra for garnish
  • ¼ cup pistachios plus extra for garnish
  • ¼ cup cashews for mixing
  • 2 tsp warm milk
  • a pinch of saffron
  • ½ tsp cardamom powder

Instructions
 

Preparation

  • Place a strainer over a large bowl and line it with a large cheese cloth.
  • Transfer the 2 lbs curd onto the cheese cloth. Tie the cheese cloth securely and let it sit overnight. This will allow excess water from the yogurt to drain, resulting in a thicker consistency.
  • In a small bowl, combine ¼ cup almonds and ¼ cup pistachios. Soak them in lukewarm water overnight.

Making the Matho

  • In a small bowl, combine 2 tsp warm milk with a pinch of saffron and set aside.
  • Finely mince the soaked almonds, pistachios, and ¼ cup cashews in a food processor or by hand.
  • After the curd has drained overnight, transfer the hung curd into a large mixing bowl. The volume should have reduced significantly due to the removal of water.
  • Gently mix and fold the hung curd to ensure it’s smooth.
  • Add 2 tbsp malai and ½ cup sugar to the hung curd. Mix well until fully combined.
  • Stir in the chopped almonds, pistachios, and cashews, reserving some for garnish if desired. Mix thoroughly.
  • Pour in the saffron milk mixture and add ½ tsp cardamom powder Blend well until all ingredients are evenly distributed.

Chill and Serve

  • For best results, refrigerate the Rajbhog Matho for at least 30 minutes before serving.
  • Serve chilled alongside puri for a delightful treat.
